Caraflex® is a system for the continuous and time related caramelisation of cooked sugar masses containing protein. Individual degrees of caramelisation, between milky white and dark brown, are possible. The vessel is jacketed for heating and the insulation is hermetically sealed. The hygienically designed agitator is equipped with scrapers and a frequency-controlled drive to avoid burn on of the caramel mass. The vessel is also designed with load cells and a high-pressure dynamic spray unit for CIP.
