Brittle is a mixture of nuts (i.e., almonds, hazelnuts or walnuts) and caramelized sugar. It can contain butter or other fats. Additions of milk powder, glucose syrup and honey are also possible.

Brittle can be used as an addition or decoration for sweet dishes in ice cream or other confections. Brittle is divided into three types depending on the consistency: Hard brittle, Soft brittle and Laminated brittle.
